Home cooked

Last night’s dinner was wonderful.  Since we’ve been so busy with house guests the past few weeks my husband and I didn’t get a chance to enjoy a home cooked meal together, alone.  Well, we dined alone last night.  I really wanted to make a nice simple meal and have it ready by the time the hubby got home.  It’s been a little warm most early evenings and after eating out so much, we both were wanting something a little bit on the lighter side and not so hot.  As you all know last week I got a new cookbook, In the small kitchen, and wanted to try something from it.  Many of the recipes in this book look so yummy, it was hard making a decision.  p.s. they also have a blog with a lot more recipes.  Finally, the pesto chicken salad sandwiches (modified a little) were the winner.  At first a nice salad was going to be the side to compliment the sandwich, but then I remembered the kitchn has tons of recipes & found a nice simple coleslaw.  First time making coleslaw and it was not only easy, but good!  It was actually really nice to think about what to have for dinner, do a little shopping, and prepare the meal.  The food wasn’t ready when K got home (he forgot to call me to let me know he was on his way home), but he loved the meal and we’ve decided to add this as a quick “go to” recipe.  We finished the meal with fresh-baked brownies.  Ahhh, I wish we could eat home cooked meals everyday.
